A kitchen that keeps
coastal time.

We cook the way the Malabar coast has always cooked: coconut scraped fresh each morning, masala roasted in small batches, rice soaked overnight. Nothing is rushed and nothing is reheated.

The tiffin counter opens at six with puttu and steamed idiyappam. By noon the biryani pots come out of the dum, sealed with dough and opened only at the table.
